Ingredients

  • 1 large onion
  • Olive oil for sautéing
  • 1/2 cup coarse bulgur (or more depending on portions)
  • 2 tomatoes
  • Salt to taste
  • Allspice to taste (optional)
  • Optional greens: Swiss chard, green beans, mallow, or wood sorrel

Instructions

  1. 1.Sauté a large onion in olive oil.
  2. 2.Add about half a cup of coarse bulgur, or more depending on how many people you're serving.
  3. 3.Finely chop or grate two tomatoes.
  4. 4.Combine everything together over low to medium heat and let it cook through.
  5. 5.Season with salt and a pinch of allspice to taste.
  6. 6.Note: if you have greens on hand - like Swiss chard, green beans, mallow (khobayze), or wood sorrel (hameed) - add them in with the bulgur and tomatoes for an even more authentic Southern dish. Just keep in mind that green beans need a little longer to cook than the rest.
